giant two serving chocolate chip cookies

this is a perfect recipe for a rainy night when you have a sweet tooth & nothing sweet in the house at all. at least that was my situation a few hours ago.

i was searching pinterest for some kind of cookie to bake, anything really to catch my attention. that was when i came across these single serving size chocolate chip cookies from melissa at no. 2 pencil. if you’ve ever tried making any single serving desserts from pinterest, generally they don’t turn out that great. or at least not in my experience (please tell me if you know the secret). in the past i’ve tried mug cakes, mug brownies, mug cookies, & a recipe that made only two cupcakes. they were all either spongey & didn’t really satisfy my sweet tooth or  loaded with so many chocolate chips you couldn’t even eat the whole thing.

but these turned out pretty good, much better than any of the mug cakes and cookies, not as great as my favorite chocolate chip cookies (nestle tollhouse, the recipe on the back of the chocolate chips) though. so if you’re like me go search through the pantry for some kind of chocolate & a few baking ingredients & you’ll be on your way to sweet tooth heaven & a cold glass of milk.

giant two serving chocolate chip cookies

serves: 1-2

ingredients

  • 2 tablespoons of butter
  • 2 firmly packed tablespoons of dark brown sugar
  • 1 tablespoon of granulated sugar
  • pinch of kosher salt
  • ¼ teaspoon of pure vanilla extract
  • 1 egg yolk – discard or set aside egg white for a different use
  • ¼ teaspoon of baking soda
  • ¼ cup of all-purpose flour
  • 3 heaping tablespoons of semisweet chocolate chips

directions

  1. preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. in a microwave safe bowl, heat butter just until it starts to melt and is softened. blend softened butter, sugars, salt, and vanilla together by hand.
  3. add egg yolk and stir again.
  4. add baking soda and flour and stir until combined.
  5. then stir in chocolate chips.
  6. form cookie dough into two balls and place on baking sheet.
  7. the cookies will spread during baking, so make sure they are several inches apart.
  8. bake for about 8 minutes, or until edges are golden brown.
  9. remove baking sheet from oven & let them cool on the pan for a few minutes.
  10. stuff your face & finish with a glass of milk (:

bead board LOVE sign

this summer i have been all about some d.i.y. wall decorations. in august i will be moving into my dorm & can’t wait to put all of my decorations up. the most recent one i’ve completed was an adorable bead board sign i found on pinterest. the original post was from make it & love it, but i made mine smaller and painted it a little bit different.

this was super simple to make, i promise. & you can’t really mess it up. you may already know how to make this just from looking at the picture, but here’s how i did it:

decide on what size, font, & color letters you want to use. craft stores like hobby lobby & michael’s have a variety to choose from. i used 9.5 inch letters & painted them white.

cut your bead board to whatever size you want. lowe’s or homedopt will normally cut it for you. i figured out the size i needed by multiplying the letter height by 2 & adding 5. so my letters were 9.5 x 2 = 19 + 5 = 24 height wise. then i subtracted 3 on the width b/c the letters aren’t as wide as they are tall.

if it isn’t already painted white you will need to paint it. it works best to paint it white first so if you decide not to paint the creases, like i did, it won’t be wood colored & your color will be more true to what it looks like out of the bottle. i used some valspar interior white paint b/c we had it around the house, but any acrylic paint will work.

here it is after two coats of the white paint. make sure to paint the edges too.

after the white paint is completely dry then paint it whatever color you choose. i used a sponge brush to give it a textured look & so the crevices in the bead board would stay mostly white. but this part is up to you & how you want it to look.

after everything is dry & painted, its time to glue the letters on. hot glue worked great for me!

attach a hook to the back if you want to hang it & you’re all done!

date night number one

as part of my 101 in 1001 challenge & being inspired by shannon’s date night, i am going to plan 12 dates for justin & i. a whole year of planned-out- no-decision-making dates. this is big for us b/c we both hate making decisions, like we have fought over it before, not kidding. so for july, i planned a day trip to atlanta to try some new, exciting things.

first we both go pedicures at a new nail place we had neither on tried. it ended up not being in atlanta, b/c we decided to stay in town until closer to dinner. i was kind of nervous about going somewhere new, i guess i’ m not big on certain kinds of change. but it turned out it was a great choice. we loved the ladies doing our feet and we decided to definitely go back there and maybe make it our new “normal” place. we got the foot mask & towel wrap option, to splurge a little bit b/c we normally get just the basic. the foot mask made our feet super cold though! justin still had some dead skin on his heels, so next time we’ll have to mention that. but we loved getting pampered and it was a nice change in environment. plus the lady that did my toes was really good at nail designs & i got these super adorable anchors!

then we headed to atlanta to do a little bit of shopping before dinner. we both love to spend some money, but we decided in advance to stick to a set amount for our date night & i even got cash out of the bank so i wasn’t tempted to swipe my card at all. however, since i had planned a little more for the pedicures and i didn’t get my nails done, i had a little bit extra money so i got a pizza cutter for my mom b/c she has been talking about needing one forever.

then we headed off to dinner right down the road at hudson grille, a place neither of us had ever been. and it was delicious! we ended up being there on $5 burger night which was crazy, b/c i tried not to pick a cheap place to eat but it still turned out we both got $5 burgers. the environment was very relaxed & the restaurant was clean & had good service. i would definitely recommend it if you’re ever in atlanta.

after dinner we went to the movie now you see me & it was awesome! definitely see it when it comes out on dvd if you didn’t see it in theaters. the theater we went to had lazy boy recliner chairs and they were great! the only thing was i was wearing a dress & the recliners were leather so i kept sticking to them.

we had so much fun, and it was great not having to make any decision on the spot. i can’t wait to see what next months date night will be. join shannon & all the other bloggers who are doing a year of dates, and plan dates for your boyfriend or husband.

bake something new each month: june, cutout sugar cookies

i’m always looking for a good sugar cookie recipe that is three things:

1) a dough that holds its shape well

2) a fairly basic recipe that doesn’t require half of your pantry

3) a great tasting cookie that isn’t dry or crunchy

well, i have found one that holds up very well to those three things! i tastes just like the package mix that you buy at the store and add butter and egg. it rolls out very well after being refrigerated. and it holds its shape for the most part (probably wouldn’t be good if your cutout has small legs, intricate pieces, etc).

in addition to being an overall good cookie, they stay fresh for a couple weeks as long as they are in an airtight container. i sent them in a care package to the summer camp my sister is working at and she was still eating on them when i visited her the next weekend.

101 in 1001

i recently was reading a blog post about how to move 1000 miles and keep track of your stuff, & while i was probably only moving about a half of a mile, i still decided the moving system talked about in the blog post would be a good thing to do. i was so impressed with this lady’s organization skills, i kept reading her blog.

& that was when i found it. the 101 in 1001. at first i saw it mentioned in another post and i was confused as to what she was talking about but then i found the tab at the top of her blog that introduced me to something i soon was addicted to.

day zero project is the website that came up with the idea of the 101 things in 1001 days list. now you’re all probably like “what is she talking about????” let me explain.

the challenge: complete 101 preset tasks in a period of 1001 days (roughly 2.75 years)

the criteria:  tasks must be specific (ie. no ambiguity in the wording) with a result that is either measurable or clearly defined. tasks must also be realistic and stretching (ie. represent some amount of work on my part).

why 1001 days?:  many people have created lists in the past – frequently simple goals such as new year’s resolutions. the key to beating procrastination is to set a deadline that is realistic. 1001 days (about 2.75 years) is a better period of time than a year, because it allows you several seasons to complete the tasks, which is better for organizing and timing some tasks.
